I am so excited to be an official ambassador of the very first Kids Yoga Day 2016! Join me and thousands of others across the globe on Friday, April 8th at 11:00am for a 5 minute yoga routine to share the gift of yoga with children. There are currently 27 states & 9 countries on board. I plan on leading & participating with my 3rd class of students that day. If you are interested in providing this experience for your children, or you'd like some suggestions, please let me know. Love LaraBars? Then you'll love this recipe!Recently I completed the Whole30. Once I was finished I was looking for healthy snacks that would not only be acceptable for my improved way of eating, but that would also be something I could put into my kids lunch boxes. I began playing around with healthy cookies and balls. Along the way, I picked up a Larabar at the store one day. Can you say De-Lish? So I decided to try my hand at making my own. I experimented a bit and landed with this recipe. Not only are they yummy, healthy, & filling, but my kids love them, too! LaraBall Recipe: * 1/2 cup raw cashews * 1/2 cup raw almonds * 1 1/4 cup medjool dates * 1 cup unsweetened shredded coconut * 2 tbsp coconut oil * 1/4 tsp cinnamon * 1 tsp chia seeds * pinch of salt (optional) Place all ingredients into a high powered blender (I use the Ninja) and combine on medium-high power. Stop every so often to scrape down the sides until you reach a similar consistency as the picture above. When it's all blended, place the mixture into a large bowl. Using a regular cereal spoon, scoop a large spoonful. Use your hands to squeeze the spoonful together and form into a 1 inch ball. I usually place the finished balls into an airtight container and keep them in the fridge. Make about 20-25 balls. I hope you enjoy these little treats as much as we do! Recently, I began to notice myself saying, "Well, isn't that a little slice of heaven?" As I paid more attention to the moments when I was making this statement, I began to see a trend. I wasn't just becoming aware of the objects or possessions that make me happy (i.e. The color purple makes me happy. Fall decor makes me happy.). No, these were less about actual materials and more about specific instances where life felt heavenly, even if, for just an instant. I started to jot down these twinkles of time whenever they happened and I realized I had begun a list of those simply pleasant occasions in your life when the focus isn't about concrete items but about mindful moments in time. So, I've decided to share my current Little Slices of Heaven from Autumn list with you all today.
